Growing up in the Valley, April Demarest has seen both the evolution of the community and of Sky Harbor International Airport. As a member of the PAFS team since 1996, she has also played an integral role in the remarkable progress of the company.

Starting her 23-year career in the food service industry at Dexter’s Subs at central Phoenix’s landmark Park Central Mall, April now oversees the fast-paced world of one of Terminal 4’s busiest restaurants – Paradise Bakery & Café, helping to make sure her guests have all of the Double Chocolate cookies (her personal favorite) they could want.

“I love my crew,” April says, “and I love the chance to make a difference each and every day.”

Now residing in Chandler, Ariz., April has yet to step on one of the planes that fly in and out of the terminal in which she spends so much time. But, when she does, it will be heading to Paris.

If you’re going to take your first flight, it might as well be a big one.

Josette Rodriguez, General Manager
Paradise Bakery & Café , Sky Harbor Terminal 4

With 24 years in the food service industry, including 13 at PAFS, Josette Rodriguez brings a steady and
experienced hand to the busy Paradise Bakery location in the lobby of Sky Harbor’s bustling Terminal 4.

Josette has spent her entire working life serving the needs of her customers, starting with her very first
job as a maid at a Holiday Inn in her native Pocatello, Idaho. And it’s the variety of people she meets and
serves every day makes her role at PAFS most enjoyable. That and access to all of the Paradise Bakery
salads that are her favorite menu items.

“I try to make sure every customer is taken care of as best as possible,” Josette says proudly.

Taking care of people comes naturally to Josette. It’s not only because of her long career, but her
dedication to raising a family with her husband, Carl -- a family that includes two daughters and four

Alicia Kress, General Manager
Paradise Bakery & Café, Sky Harbor Terminal 3

From her very first scoop, working in a Baskin-Robbins ice cream shop in her hometown of San Diego, Calif., Terminal 3 Paradise Bakery & Café General Manager Alicia Kress was hooked on the food service industry. Joining PAFS in 2010, Alicia is now hooked on serving the travelers who visit her restaurant.

When she’s not serving up a California Turkey Sandwich (her favorite), Alicia can be found at her home in downtown Phoenix, playing with her puppy, Sophie. But, as a 12-year veteran of the business, the restaurant is never far from her thoughts.

“I love that every day I face a new challenge,” she says.

Another challenge Alicia hopes to face is taking the long flight to Australia and New Zealand.

“I’ve wanted to visit there since I was very young,” she says. “I love that so many of our guests are in the midst of exciting travels.”


Kathy Goodrum, General Manager
Paradise Bakery & Café, Sky Harbor Terminal 2

Starting with her very first job working the snack counter of a Skaggs Drugstore in her hometown of Chicago, Kathy has built an impressive 35-year career in the food service industry. After stints as Food & Beverage Manager at Casino Arizona in Scottsdale and Catering Coordinator for Famous Dave’s BBQ in Mesa, she joined PAFS in 2010, quickly rising to the rank of General Manager of the Sky Harbor Terminal 2 Paradise Bakery location.

Often found enjoying a chocolate chip banana muffin (her favorite Paradise menu item), Kathy takes pride in providing the best possible customer service, ensuring that every guest leaves her restaurant happy.

“I enjoy working with my wonderful staff,” Kathy says. “I also enjoy meeting the different guests that come through the airport and visit our restaurant. I love coming to work!”

She’s been known to toss together a quick and healthy meal of turkey, spinach and strawberry dressing in a pita pocket for her family of kids Madison (18) and McKenzie (16), and fiancé, Allen – frequently before hopping on a bicycle for a ride at one of her favorite spots around the Valley.

In fact, Kathy dreams of one day grabbing a backpack and spending a month touring and cycling around Ireland – “Why not? I’m Irish!,” she exclaims with her usual enthusiasm.


Morgan Shipley, General Manager
Copper Plate, an American Grill & Paradise Bakery & Café
Mesa Gateway Airport

A veteran Paradise Bakery & Café manager, Morgan brings more than 18 years of food service experience to Copper Plate, An American Grill, and Paradise Bakery at Mesa Gateway Airport. Every day is a little different as General Manager of these two busy locations and that’s what he enjoys most about his role.

While he got his start in the ‘industry’ at his very first job as a fry cook at McDonald’s, Morgan’s favorite item on the Copper Plate menu is the very healthy – and tasty – Strawberry Salad. He’s equally enthusiastic about the unique Turkey Cranberry sandwich at Paradise Bakery.

An Arizona native born in the border town of Douglas, Morgan is enjoying bringing the unique Copper Plate concept to life for passengers at Mesa Gateway. And while there aren’t any direct flights from there to his dream destination of Venice, Italy, he hopes to make it there someday.

“I think it would be interesting to visit a place where the roads are made of water,” he says.

Morgan currently resides in Gilbert… where the roads are definitely not made of water.


Echo Rieken, General Manager
NYPD Pizza Terminal 4

As General Manager of the new NYPD Pizza in Terminal 4, Valley native Echo Rieken is accustomed to a
fast pace and constant activity. In fact, she wouldn’t want it any other way.

Coming to PAFS to help open the first NYPD Pizza location at Sky Harbor International Airport, Echo’s
15 years of experience in the food service industry certainly comes in handy. But it’s her enthusiasm
for her work and the challenges she faces daily that shows her dedication to creating the best possible
experience for her customers.

“Every day is unique,” she says. “When all of the pieces are in place, the flow of a busy day is a beautiful

Echo often takes her love for activity outdoors – hiking, mountain biking, rock climbing – and her
favorite vacation spot is Aspen, Colo. because of, naturally, the abundance of outdoor action available
there. She would love to board a plane at Sky Harbor someday soon for a tropical getaway with her
longtime beau, Ron, just for a change of pace.

Although, chances are good you won’t find her simply lounging on the beach.
